Love On Cloud Nine With Food Cloud...

In fact, the way to most people's hearts are through their stomach. And this Valentine's Day, Food Cloud promises to tease your appetite with a twist. So do up your home in candles, add those fragrant flowers and that special table mat, chill the champagne and let Food Cloud give you a magical dinner date at home.

The web portal, Food Cloud, that is the brainchild of Vedant Kanoi and Shamit Khemka,  which connects home chefs to customers has two special Valentine's Day offerings -  a "Valentine's Special" page on Food Cloud where eleven chefs have curated sixteen special two-course and three-course meals; and the best five dessert chefs have curated fascinating desserts from chocolate bars that are a proposal, by Chocazure to naughty cupcakes crafted by All things Yummy, bouquets of edible delights to smooch mini brownies prepared by G's Patisserie.

To make our V-Day celebrations sweeter, Food Cloud chose Chocolate Day, i.e. 9 February with their aesthetic truffles placed in a heart-to-heart gift-wrapped hamper delivered to our doorstep. 💑 👫 💝 🎁



With over 300 chefs on board providing delightful meals to over 25,000 customers on a monthly basis, across Delhi-NCR and Kolkata, they've recently been inducted into the Govt. of India's start-up initiative as well, and are one of the few food tech firms that continue to hold strong, while quite a few have shut shop in the recent few months.

Towering Through Caramel!

Neeru’s husband Ravi was fond of sweets and she always felt elated when he used to relish all the dishes she would prepare for him. One bad day, all hell broke loose when Ravi was diagnosed with the deadly lifestyle disease that is diabetes. He, although being a man cried as he couldn't let go of his sweet tooth. But he had to.

For a few days, Neeru also couldn’t think of any alternative. She tried abandoning sugar once and for all in desserts prepared at home but although ingredients such as rice, milk etc. have an intrinsic sweetness, still that appetizing relish couldn’t be recreated by her. But, she didn’t lose hope, in attempts to keep a watchful eye on her husband's health. One fine day she came to know of Sugar Free Natura and thought of giving it a try. She thought of making Ravi’s favorite Caramel Custard with a twist. She took it upon her as a #DessertChallenge.

Custard Cake Tower

~~~ 

Portion Size: 10
Serves: 4

Preparation Time: 10 Minutes
Cooking Time: 15 Minutes

Utensils:

  • Vessel: 1 nos. 
  • Stirrer: 1 nos.  
  • Bowl: 4 nos. 
  • Gourmet Bowl: 1 nos. 

Ingredients: 

  • Full Cream Milk: 500 ml. 
  • Sugar Free Natura: 1 gm. 
  • Custard Powder (Vanilla variant): 4 tsp.
  • Chocolate Cake Slices: 5-6 nos.
  • Fruit Gelatins. 




Directions:


  1. Boil full-cream milk. 
  2. Dissolve the custard powder in half-a-bowl milk. 
  3. Pour the dissolved powder in the boiling milk, while stirring. 
  4. Add Sugar Free Natura and stir to dissolve.  
  5. Switch off the burner. 
  6. Refrigerate for 20 minutes. 



Plating:

  • Take one Gourmet bowl with lid. 
  • Arrange two layers repeatedly: Vanilla Custard on top of Chocolate Cake Slice. 
  • Top the tower with fruit gelatins. 
  • Serve individually in smaller bowls. 








Custard Cake Tower was thus ready to savor!

When Ravi saw it at first, he didn’t even want to taste it.


Now, he was of the belief that unsweetened custard would be insipid on his palate. Neeru asked him to give it a try.

The moment he took one spoon of custard, a big smile lit up his face but at the same time left him puzzled and looked towards Neeru as to how she was giving Ravi sweet custard!



Neeru let him in on the sweet surprise – Sugar Free Natura. 

Lo! Ravi's flavorless and vapid days are now gone with the wind as he can freely enjoy all his favorite desserts without bothering about his diabetes.  All thanks to Sugar Free Natura.

Artistic Baking With The Academy Of Pastry Arts...

A Media Invite to witness best-in-trade chefs exhibiting their prowess in creating awe-inspiring pastries, cakes and confectioneries. 

When? 
Saturday, May 23. 

Where? 



Last Saturday was a perfect blend of knowledge, skill-testing and fun. I was provided with an experience to cherish by the in-house professionals of the Academy, which has, after establishing their art with the Malaysian and Philippinean audience, forayed into the expanse of welcoming Indians.

I was greeted by this magnificent sugar sculpture, which you can see, to the left, in the snap above.


That beauty-in-the-box told me that I was in that day, for all things, creamy, floury, sugary and nice. :) 

And, I couldn't be happier to witness four of the experts of the trade, acquainting us with the know-how to being a master baker in the comfort of your modular kitchen at home!

Interactive sessions form the basis of a sound learning experience - be it the classroom or the kitchen. :)

After being introduced to the appliances being professed in their kitchen, we proceeded to the Master Class.

Chef Amit Sinha was to be our 'Guru' for the day. 
And oh! Did I tell you that the floral embellishments on the sides are edible? :D

First things first. We must don the Chef's Cap, mustn't we? :) 


Second, we must step onto our stations. 
Third, we must pay attention towards the lesson being taught. 

Attention towards the whiteboard, taking quick notes and listening raptly to emulate the expert afterward.

Did you know of Madeleines, also known as French Butter Cakes? 
I didn't. 

If you don't too, let me show you their adorable molds - Madeleine Pan, as it is called. I thought of them as Mini Oysters baked to perfection. 


Don't the molds look like oysters to you too? 
One pan gave us nine Madeleine to try. 
We made them in Vanilla and Chocolate variants. :) 


That is Chef Amit Sinha piping the first vanilla Madeleine. 
What resulted after piping and baking, are these... 


Those are the first Chocolate and Vanilla madeleines, made by Yours Truly. 
A dozen of them. :) 
I loved them and made a basketful! :D
The lemon zest gave them a tangy taste.

Next, we moved on to the Apricot Crumble Butter Cake. 

The crumble could be made of Oats, Hazelnut, Chocolate, Coconut or even Spice! 
We made it with Coconut and Sugar Icing. 

Have a look. :) 


These are the barters poured into cups, which would then be placed in the oven to bake. 

Vanilla barter at the bottom, an apricot in the middle, layered with crumble, and then again vanilla on the top. 

We garnished it with another layer of crumble and icing after it was done baking. A caramelized apricot slice was crowned atop too! :D

Good things are to be saved for the last. 
We finished off with Orange Chocolate Cake. 
Bar shaped chocolate cake, glazed and topped with caramelized orange peel. 
The two main ingredients of this dessert complement each other really well, I was told. :)
